I weigh my arrows, matching components up to shafts to give the best weight match across the set... It's not that I think it makes a difference for me, but it's one less point to think about afterwards. It *may* also help to spot a rogue shaft - if (for example) you spot that one shaft is significantly different in weight to the others, that may be a warning sign.

If I didn't weigh components, I wouldn't know that (to give an example) Easton ACE point and inserts vary a fair amount more in weight than Cartel break-off points...

I was given a set of "reloading scales" a few years back, which are ideal for this sort of thing. They're a simple balance, magnetically damped to make them easier to read, and go down to 1/10 grain. I can weigh fletches, nocks, points, whole arrows using them (though I modified the pan for weighing shafts - they had a tendency to roll off!).
