Um, seeing two targets with both eyes open is the norm, I would say. You just have to choose the one you aim at consistently. With practice, the "other" target disappears from your vision (your brain is good at ignoring things).
I have never seen just a single target, when aiming with both eyes open.
One tactic you can use when starting out is to address the target with one eye closed, then open them both as you continue the draw - that way you have some confidence that you've chosen the right one to aim at...
