It's very simple.

Two bits of advice (one already given but it's worth saying again):

1) cut the first strand on the serving (either end will do) *VERY* carefully. If you rush this then you risk cutting into one of the string strands and ruining the string.

2) unwinding is easy. If you tease the center serving by running your fingers against it in the oposite direction to the one it was wound on, you'll find it loosens naturally. I then cut into the serving about an inch or two in and then pull slowly while teasing and it will just come off. Repeat 5 or 6 times and the serving is off. You can do this in a couple of minutes tops (unless the serving was either glued on or the string material was very waxy.
