Zanda, once I have worked out how to direct lift horizontally into the wind, there will be no lift left so the bow will be as steady as it is on calm days.
Perhaps the airfoils should be at 45 degrees, two above horizontal and two below so the resultant force is horizontal into the wind.

Or,how about some ducting on a tripod that driects air round the bow to the opposite side, blowing enough air to cancel the true wind. Now that has to be a winner!! Plus, I can see no flaws in the reasoning.!! And in case FITA or GNAS get worried, I'll disguise it as a telescope.
