I think they are thinking of using Holyrood Park. There is a fairly large flat area next to The Palace of Holyroodhouse but it faces East West.

The rest of the park is fairly hilly, but its not beyond the bounds of possibility that they could build a platform on a section of it.

Some of the private schools in Edinburgh have some very large playing field areas and though they have a view of that famous skyline they are not so scenic.

Or they could use the Promenade at Portobello
