must be personal preferences, I shoot top middle bottom, my missus shoots middle top bottom and a good friend and team mate shoots middle bottom top.

Used to shoot top to bottom now shoot bottom to top as I found that somtimes the shadows cast over the centre or slight to one side distracting

Found the vegas style target strange XX9 usually on the third one even if I shot it backward only avoided it if I shot 1,3,2

Has to be a head thing

Bottom to top for the shadow reason. When you get spotlights on the tops of the targets its impossible to shoot them top to bottom.

what order do you shoot a three spot face

I shoot from top to bottom so that i know which face i have already shot by counting my arrows (can never see my arrows in the face)

Rubbish. Top to bottom, always. Never had a problem with the lighting (except when there's not enough of it).

Generally top to bottom. Find it harder to go uphill. Interesting view from someone I shot with last year. He shot the middle target first, reasoning that if he missed either high or low he might still score.
