I am a little unclear about setting the knocking point. I have just read that I should set the top knock 1/2 inch above the line of the arrow rest but surely this depends on the shaft size of the arrow that is being used.
Does this make sense?

Like many things in Archery there are 'rules' but only ever treat them as a guide.
The idea of using the same serving again is a new one on me - the nature of the task dictates that it'll get shorter everytime, and serving material is a minimal investment.
And letting the shop do it - fine if you're near a shop and don't foresee ever having to get yourself out of trouble.
Best bet is follow one of the links already given and try it yourself (very easy to practice the principle with cheap 'stand-in' material )
Oh, nocking point - once you've got this one sorted and 'tuned', mark it on your gauge - always there then!

I've had a bit of trouble with finishing my serving personally - I can't pull the rest of the serving through and just end up with my 'hook' serving stuck

Yeah...I suck.

Take a piece of scrap bow string or serving thread about 4" - 6" (10cm - 15cm) long. Place the scrap string over the area where you are about to serve as in Figure 6.10 below. Continue to serve as usual for about 10 to 15 turns or for about another quarter of an inch.

Once you have finished serving, pull an additional 2" - 3" from the spool and cut. Take the running end of this serving and place it inside the loop of the scrap string. Gently but firmly pull the scrap string. Your serving end will be pulled together with the scrap string. Once the serving end is pulled through, pull it gently to tighten your serving. Cut off the excess serving string that is sticking out and you're done.
When I tug on the scrap string to pull the end of the serving inside it gets tight very quickly...and the scrap string get's stuck.

If you use the spool when applying the centre serving, you can use it to give you something substantial in your hand when pulling it through... slowly but firmly (and some crossed fingers)

ah - if thats it then it can be a problem on a tight serving - wrap it round something else (pencil?) to pull.

I do have a serving jig, but I'm not sure I understand...have the 'scrap thread' attached to the spool? That's the bit you tug on. Although I can try the pencil technique next time.

I think it is a slightly different technique actually.. looking closely at the diagram you have posted. I think I'd just confuse issues more if I tried to explain the technique I was shown... you don't need scrap as you use the serving itself to finish as you serve over itself!
